3 Easy Breakfast Recipes for Your Next Caravanning/Camping Trip

Camping and caravanning, there’s nothing quite like it. The freedom of pitching up wherever you like and exploring a new destination with each trip, you can’t beat it! And while cooking on a campfire or rustling up a meal in your home away from home is usually all part of the fun, after a day of exploring sometimes we want something quick and easy to fill our bellies instead. Thankfully, we have you covered… our three easy recipes are not only delicious but so quick to prepare so you can spend more time enjoying your holiday.

Pancakes


This make-ahead recipe from kid friendly thing to do.com means all you have to do when you want fresh, fluffy pancakes is pour, flip and serve. If you’re camping with friends, it’s a sure way to impress. We recommend making your mixture at home on the day before your trip and pouring it into a squeezy bottle (a used and cleaned mayonnaise bottle works great).

Overnight Oats


Overnight oats aren’t just great for camping and caravanning but they also make a delicious and nutritious breakfast for busy weekday mornings at home too. They’re perfect for snacking on en-route to your destination, especially if you’re setting off early. You can either make these oats before your trip if you have a place to keep them chilled, or while you’re away. If you do choose to make them at your campsite, we recommend making them on a quieter evening, ready for a busy day ahead.

Ingredients for Basic Overnight Oats:

• Porridge oats 100g
• Milk (dairy or plant based) 50ml

Optional Extras:

• Peanut butter
• Cocoa powder
• Honey
• Syrup
• Yoghurt
• Jam
• Marmalade
• Chopped fruit
• Nuts
• Seeds
• Vanilla extract
• Chocolate chips
• Cinnamon
• Chia seeds


Method:

Simply mix the porridge oats and milk together in a bowl, add to the jar and chill for at least 3 hours (preferably overnight). For a thicker consistency add in some yoghurt. You can customize this recipe any way you like by adding fruit, chocolate, nuts or any of the other suggested ingredients above. Once the mixture is chilled it will be ready to eat right out of the jar, don’t forget your spoon!

Breakfast Hash

This easy foil packet recipe makes an easy but delicious family breakfast. Simply add all the ingredients on a sheet of foil, seal up the edges and toss it on the camping BBQ or grill.

Ingredients:

• Roughly chopped Russet potatoes 130g per person
• Breakfast sausages of your choice cut into bite size slices 1 per person
• Finley sliced chorizo 100g
• Finley chopped Spring onions 1 per person
• Salt and pepper to taste
• Oregano 1tsp
• Medium Eggs 1 per person
• Shredded cheddar cheese 20g per person
• Drizzle of olive oil

Method:

Toss all ingredients apart from the eggs into a mixing bowl and mix until everything is well combined.

Cut three sheets of foil around 30cm each. Place the sheets on top of each other to create 3 layers. Scrunch the edges of the top sheet slightly to create a well for your ingredients. Drizzle with olive oil and add the mixture. If you are cooking for a lot of people you may want to spread the mixture out into another foil packet.
Scrunch the edges of the second and third sheet until your ingredients are tightly packed within the foil.

Meanwhile, fire up your BBQ or grill until it is ready for the foil packets.

Add the packets onto the grill and turn occasionally. Cook until the potatoes are soft and the sausages are completely cooked through. Right at the end, mix your eggs in a bowl and pour into the packet, give the packet a gentle shake to ensure the eggs are well combined.

Leave on the grill until the eggs are cooked and add your grated cheese. Close the packet for a few minutes while the cheese melts and serve.
